The Inkerman International group of companies, one of the largest producers of wine products in Ukraine, in October 2014 began the production of champagne under the INKERMAN.
Suppliers of raw materials are such companies as Dionis, Oksamitnoe, Champagne of Ukraine, and others. Sparkling wines, as originally planned, are bottled at OdessaVinProm. The above farms, in addition to modern technical equipment, also profess the principles of classical winemaking, which helps us to find a common language and get good results quickly.
We produce our sparkling wines from high-value grape varieties that have reached precisely the degree of maturity* that is needed for natural champagnes. Only the very first fraction of grape juice (must) is used – gravity. This helps to end up with a very delicate aroma and refreshing taste. But, of course, we achieve complete harmony and balance by mixing, i.e., blending wine materials, using all our accumulated experience and creativity of the INKERMAN team. Fermentation in special tanks – acratophores, which began to be used in France at the end of the 19th century (the Charmat method), allows you to control the process of secondary fermentation, which means that you consistently achieve even, high quality. For producing high-quality sparkling wines, it is not so important which of the natural secondary fermentation technologies is used: the Charmat method or bottled champagne.
