Nowadays, one of the main wine and cognac producers in Georgia is the Kakheti Traditional Wine Making Company (KTV).
The origin of the company and its history are connected with the name of Antimoz Chkhaidze, who in the 80s of the XIX century founded the wine cellar Marani in the Gurian village of Askana. A talented winemaker has created a unique collection of wines. Using special technologies, he produced wines of a special taste, the unique varieties of which became well known not only in Georgia, but also in whole Europe.
Based on ancient family traditions, the descendants of Antimoz Chkhaidze in 1998 founded Askaneli Brothers company. Its success has contributed to the establishment of a subsidiary. So in 2001, the KTV Company was founded. Today it offers the consumer high-quality varieties of wines and cognacs.
An excellent taste of Georgian cognacs is due to the forethought of the blend and the strict implementation of the old traditions of strong alcohol production. The technological process is divided into five stages:
1. Harvest (to obtain distillates, white grape varieties Chkhaveri, Goruli Mtsvane, Rkatsiteli, Tsolikauri, Chinguri, Tsitska are suitable).
2. Production of white wine (this wine material is made according to European technologies and has neutral tones of taste).
3. Distillation (wine is distilled twice on Charente apparatus).
4. Alcohol aging (distillates are placed in barrels of mountain Caucasian oak and aged for 3-7 years).
5. Post-blended rest (cognacs assimilate in oak barrels for about 4-12 months).
